Why dry-aged fish?

The dry-aging process transforms our fish, yielding unparalleled flavor and texture. We safely remove excess moisture through evaporation by letting our fish rest in a carefully controlled environment. This process removes unpleasant odors, breaks down tough proteins, and allows the fats to naturally concentrate, which ultimately results in a cleaner, more pronounced taste with a rich, buttery texture in every bite.

What is Omakase?

“Omakase” directly translates to “I’ll leave it up to you” in Japanese. In other words, “trust the chef.” Omakase is a dining experience where our chefs prepare individual sushi courses in front of you and presents them so that they can be enjoyed right away. Reservations are available at our Omakase Bar for $150/pp.

We also offer a Tableside Omakase experience for all standard reservations. This experience includes three sets of our curated selection of dry-aged fish presented as nigiri (13 pieces total) and one dessert course. Tableside Omakase is available for $125/pp.

Lastly, we offer a 10-piece Lunch Omakase experience at our Omakase Bar starting at $60/pp.

Where can I park?

Paid street parking is available immediately around our block. You can also find lot parking on apps like SpotHero and BestParking.

What’s with the Malört?

We’re located inside CH Bar & Table, the proud owners of Jeppson’s Malört. We carry multiple variations of Malört and offer them on our menu as individual shots or flights.

How can I purchase Malört?

You may order individual shots to drink at our establishment. You may also purchase individual bottles to go in-person.
